These simple fried chicken thighs get a huge amount of flavor from a dusting of sichuan pepper.
Ingredients

2 pounds boneless chicken thighs

2 cups flour

2 eggs

1/2 cup buttermilk

2 cups peanut oil

1 tablespoon garlic powder

2 teaspoons salt

2 teaspoons pepper

2 teaspoons cayenne pepper

1 tablespoons sichuan peppercorn, crushed
Instructions

Heat oil in a deep pan to 325 degrees

In a shallow bowl mix together the flour, garlic powder, cayenne, and 1 teaspoon each of salt and pepper. In another shallow bowl whisk together the eggs, buttermilk and remaining salt and pepper.

Dredge the chicken in the egg mixture, then the flour mixture. Fry for about 15 minutes, flipping every 5 minutes until golden brown and cooked to 165 degrees

Place on a rack to drain and dust with sichuan pepper and a bit more salt.
