This is a family favorite that is so comforting and delicious. A mixture of Italian sausage, red peppers and mushrooms snuggled inside shells that are covered with sauce and cheese.
Ingredients

1 pound Italian sausage

1 red bell pepper, diced

6 ounces mushrooms, chopped

1 onion, grated

2 cloves garlic, minced

3 cups mozzarella cheese, shredded

1 pound large pasta shells

1 jar marinara sauce

2 tablespoons Nocellara del Belice Italian Extra Virgin Olive Oil

1 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Bring a large pot of salted water to a boil and cook the pasta shells just shy of al dente, about 6 minutes.

Heat oven to 400 degrees.

Heat olive oil in a large skillet over medium heat. Add the sausage and brown. Add the onion and garlic, season with salt and pepper and cook for about 5 minutes until tender. Add the mushrooms and red pepper and cook until tender. Add 1 cup of mozzarella cheese and mix well. Set aside.

Add a layer of sauce in the bottom of a baking dish. When the shells are ready, add about a spoonful of the sausage mixture and place in the baking dish. When all the shells are stuffed top with the remaining sauce and cover with cheese.

Cover with foil and bake for 30 minutes. Uncover and bake for another 15 minutes until the top is golden brown.
