This quick dinner is packed with flavor from a delicious garlicky sauce.
Ingredients

1 pound boneless chicken breast, cut into small pieces

1 tablespoon cornstarch

1/2 cup water

2 tablespoons soy sauce

1 tablespoon sambal

6 garlic cloves, grated

2 tablespoons rice vinegar

1 cup cashews
-
1/2 cup green onions, chopped

2 tablespoons avocado oil

1 cup rice, cooked
Instructions

In a small bowl mix the cornstarch, water, soy sauce, sambal, garlic, and rice vinegar together. Add the chicken and marinate for about 10 minutes.

While the chicken marinades heat a skillet a medium low heat and toast the cashews.

Heat oil in a large skillet over medium high heat. Add the chicken and sear for a couple minutes per side. Pour in the marinade and cook for another 5 minutes until the chicken is cooked through.

Add the cashews and green onions then serve over rice.
