These are my favorite pickles with lots of onion, garlic and fresh dill.
Ingredients
- 2 cups sliced cucumbers (kirby or persian)
- 3/4 cups water
- 1/2 cup Apple Cider Vinegar
- 2 tablespoons sugar or honey
- 1 teaspoon salt
- 1 teaspoon Pickling Mix
- 2 tablespoons chopped white onion
- 3 cloves garlic, smashed
- 1/4 cup fresh dill
Instructions
- Add the onion, dill, pickling mix, garlic and cucumbers to a glass pint jar.
- Add the water, vinegar, sugar and salt to a small pot and bring to a boil, stirring to dissolve the sugar.
- Pour the brine in the jar. Let cool completely then cover and refrigerate.
- These are best the next day and keep for up to 2 months in the fridge.
