Garlic Herb Butter Chicken

My husband's favorite meal is Chicken Kiev, but it is a pain to make. This is an immensely easier and equally delicious version with crispy chicken slathered in garlic herb butter.

Ingredients

  • 4 boneless chicken breasts, pounded thin
  • 1 cup flour
  • 2 eggs
  • 2 cups panko breadcrumbs
  • 1 cup Italian breadcrumbs
  • 2 tablespoons Garlic Herb
  • 1 stick unsalted butter, softed
  • 4 garlic cloves, grated
  • 1/3 cup chopped parsley (and any other fresh herbs you have on hand)
  • 2 teaspoons salt
  • 1/3 cup Grapeseed Oil

Instructions

  1. Heat the oven to 350 degrees. 
  2. Get three shallow dishes. To the first dish add the flour, to second add the eggs and whisk with a splash of water, and to the third add the breadcrumbs and mix in the Garlic Herb seasoning. 
  3. Heat the oil in a large skillet over medium high heat. Dredge the chicken in the flour, eggs, then breadcrumb mixture and saute for 3 minutes per side until golden brown. Place the chicken on a wire rack lined baking sheet and repeat for all the chicken. Transfer the chicken to the oven and bake for about 10 minutes until cooked through. 
  4. While the chicken cooks, make the butter by mixing the garlic, herbs, salt and butter until smooth. 
  5. When the chicken is cooked, slather with the butter and serve. This is delicious over mashed potatoes or pasta.
