My husband's favorite meal is Chicken Kiev, but it is a pain to make. This is an immensely easier and equally delicious version with crispy chicken slathered in garlic herb butter.
Ingredients
- 4 boneless chicken breasts, pounded thin
- 1 cup flour
- 2 eggs
- 2 cups panko breadcrumbs
- 1 cup Italian breadcrumbs
- 2 tablespoons Garlic Herb
- 1 stick unsalted butter, softed
- 4 garlic cloves, grated
- 1/3 cup chopped parsley (and any other fresh herbs you have on hand)
- 2 teaspoons salt
- 1/3 cup Grapeseed Oil
Instructions
- Heat the oven to 350 degrees.
- Get three shallow dishes. To the first dish add the flour, to second add the eggs and whisk with a splash of water, and to the third add the breadcrumbs and mix in the Garlic Herb seasoning.
- Heat the oil in a large skillet over medium high heat. Dredge the chicken in the flour, eggs, then breadcrumb mixture and saute for 3 minutes per side until golden brown. Place the chicken on a wire rack lined baking sheet and repeat for all the chicken. Transfer the chicken to the oven and bake for about 10 minutes until cooked through.
- While the chicken cooks, make the butter by mixing the garlic, herbs, salt and butter until smooth.
- When the chicken is cooked, slather with the butter and serve. This is delicious over mashed potatoes or pasta.
