Roasted Pork with Fennel - Olive Branch Oil & Spice

 

This is a great one-skillet meal of favorable pork quickly marinated with dijon mustard, garlic, and lemon and roasted alongside fennel. 

Ingredients

  • 1 pound pork tenderloin
  • 2 tablespoons dijon mustard
  • 4 tablespoons Koroneiki Greek Extra Virgin Olive Oil 
  • 2 lemons
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 2 garlic cloves, chopped
  • 2 bulbs fennel, sliced
  • 1/4 cup grated parmesan
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 400 degrees

  2. Mix dijon mustard, 2 tablespoons olive oil, juice of 1 lemon, rosemary, and salt and pepper

  3. Pierce the pork all over with a knife, coat pork tenderloin with marinade and let sit 15 minutes

  4. Heat remaining olive oil in oven proof skillet and sear pork tenderloin for about 3 minutes per side.

  5. Add fennel slices to pan with pork and roast for 10-15 minutes until internal temperature reaches 145 degrees.

  6. Toss fennel with parmesan and serve with lemon wedges.

Takes 30 minutes
