This is a great one-skillet meal of favorable pork quickly marinated with dijon mustard, garlic, and lemon and roasted alongside fennel.
Ingredients
- 1 pound pork tenderloin
- 2 tablespoons dijon mustard
- 4 tablespoons Koroneiki Greek Extra Virgin Olive Oil
- 2 lemons
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
- 2 garlic cloves, chopped
- 2 bulbs fennel, sliced
- 1/4 cup grated parmesan
- 1 teaspoon salt
- 1/2 teaspoon pepper

Preheat oven to 400 degrees

Mix dijon mustard, 2 tablespoons olive oil, juice of 1 lemon, rosemary, and salt and pepper

Pierce the pork all over with a knife, coat pork tenderloin with marinade and let sit 15 minutes

Heat remaining olive oil in oven proof skillet and sear pork tenderloin for about 3 minutes per side.

Add fennel slices to pan with pork and roast for 10-15 minutes until internal temperature reaches 145 degrees.

Toss fennel with parmesan and serve with lemon wedges.
