This is salmon is perfect for a weeknight – and for people (my husband) who say they (he) doesn’t like salmon.
Ingredients
- 1 pound fillet of salmon
- 1 tablespoon Garlic Herb seasoning
- 1/4 cup Meyer Lemon Fused Extra Virgin Olive Oil
- 1 lemon, halved
- 4-5 baby golden potatoes, halved

Preheat the oven to 425 degrees

Brush a sheet pan or oven proof skillet with olive oil and add potatoes and lemon flesh side down, salmon skin side down. Drizzle the salmon and potatoes with olive oil to coat. Top the salmon with the Garlic Herb seasoning.

Roast in the oven for 20 minutes until salmon and potatoes are cooked through

Squeeze with the lemon.
