Chicken simmered with vegetables, lots of paprika in a creamy yogurt sauce and lots of herbs. So good!
Ingredients

4 chicken breasts

1/4 cup flour

2 tablespoons smoked sweet paprika

2 cloves garlic, chopped

1 onion, sliced

1 red bell pepper, sliced

1/2 cup chicken stock

1/2 cup Greek yogurt

1 tablespoon dill, chopped

1/4 cup parsley, finely chopped

1 lemon, juiced

1 teaspoon salt
- 1/2 teaspoon pepper

2 tablespoons Koroneiki Olive Oil
Instructions

Heat olive oil in a large skillet over medium heat

Mix together flour, 1 tablespoon paprika, and a pinch of salt and pepper. Dredge the chicken in the flour mixture then add to the skillet. Cook for about 5 minutes per side until golden brown. Remove and set aside.

Add the onion, red pepper, garlic and another pinch of salt and pepper to the skillet. Cook for 5 minutes until just tender. Add the chicken stock and yogurt and stir until blended. Return the chicken to the skillet and simmer until the chicken is cooked through, about 10 minutes.

Add the lemon juice and top with herbs. Serve over rice or pasta.
