German Potato Salad is one of my favorite ways to eat a potato. These tasty baby potatoes soak up tons of flavor from the mustardy bacony vinaigrette.
Ingredients
- 2 pounds baby potatoes
- 6 slices bacon, chopped
- 1 onion, diced
- 1/3 cup apple cider vinegar
- 2 tablespoons sugar
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- 1/4 cup parsley, minced
Instructions

Add the potatoes to a large pot of salted water and bring to a boil. Simmer until tender. Once slightly cooled cut the potatoes into quarters.

While the potatoes cook add the bacon to a large skillet over medium heat. Once the bacon is crisp remove and set aside. Add the diced onion and cook for 6-8 minutes until tender. Add the vinegar, sugar, and mustard to the skillet and whisk to mix well.

Add the potatoes and mix well. Top with the reserved bacon and parsley.
