Greek Chicken Bowl

Super flavorful chicken snuggled up with farro, cucumbers, tomatoes and tzatziki. 

Ingredients

  • 1 pound chicken tenderloins (or 4 chicken breasts cut into strips)
  • 1 tablespoon Greek Seasoning
  • 1 cup Greek yogurt
  • 1 lemon, juiced
  • 1 English cucumber, 1/2 grated and 1/2 sliced
  • 1 cup tomatoes, sliced
  • 1 cup farro 
  • 2 cups romaine lettuce, shredded
  • 1 garlic clove, grated (optional)
  • 1/4 cup dill, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup feta, crumbled
  • Pita for serving

Instructions

  1. Bring pot of salted water to a boil and add the farro. Cook for about 30 minutes until tender and drain. While the farro cooks, make the chicken.
  2. Heat oven to 425 degrees. In a small bowl add the chicken, 2 tablespoons yogurt, greek seasoning, and half lemon juiced. Mix well, then place on a sheet pan and let sit for 10 minutes. Transfer chicken to the oven and cook for about 20 minutes, flipping halfway until cooked through and golden.
  3. Make the tzatziki sauce by mixing the remaining yogurt with a grated garlic, grated cucumber, remaining lemon juice and dill. 
  4. Make the perfect bowl by adding farro, lettuce, sliced cucumber, sliced tomatoes, chicken, feta and tzatziki and serve with pita.
