Super flavorful chicken snuggled up with farro, cucumbers, tomatoes and tzatziki.
Ingredients
- 1 pound chicken tenderloins (or 4 chicken breasts cut into strips)
- 1 tablespoon Greek Seasoning
- 1 cup Greek yogurt
- 1 lemon, juiced
- 1 English cucumber, 1/2 grated and 1/2 sliced
- 1 cup tomatoes, sliced
- 1 cup farro
- 2 cups romaine lettuce, shredded
- 1 garlic clove, grated (optional)
- 1/4 cup dill, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup feta, crumbled
- Pita for serving
Instructions
- Bring pot of salted water to a boil and add the farro. Cook for about 30 minutes until tender and drain. While the farro cooks, make the chicken.
- Heat oven to 425 degrees. In a small bowl add the chicken, 2 tablespoons yogurt, greek seasoning, and half lemon juiced. Mix well, then place on a sheet pan and let sit for 10 minutes. Transfer chicken to the oven and cook for about 20 minutes, flipping halfway until cooked through and golden.
- Make the tzatziki sauce by mixing the remaining yogurt with a grated garlic, grated cucumber, remaining lemon juice and dill.
- Make the perfect bowl by adding farro, lettuce, sliced cucumber, sliced tomatoes, chicken, feta and tzatziki and serve with pita.
