Grilled Buffalo Chicken Salad

This is a simple and tasty salad with grilled chicken, kale, blue cheese, tomatoes, celery and carrots tossed in buffalo sauce.


  • 1 pound chicken breast

  • 2 carrots, peeled and shredded

  • 3 celery hearts, sliced

  • 1 cup grape tomatoes, sliced

  • 1/2 cup blue cheese, crumbled

  • 2 bunches dinosaur kale, shredded

  • 1 stick butter

  • 1/2 cup hot sauce 

  • 2 tablespoons Mission Trail olive oil (or any varietal)

  • 1 teaspoon salt

  • 1/2 teaspoon pepper


  1. Heat the grill to high.

  2. Coat the chicken with oil, salt and pepper. Grill for about 7 minutes per side until cooked through and set aside to rest.

  3. Heat the butter and hot sauce in a small pot and simmer for 10 minutes.

  4. Add the kale, tomatoes, carrots and celery to a large bowl. Slice the grilled chicken and add to the salad. Toss the chicken and salad with about half of the buffalo sauce. Top with blue cheese. Drizzle extra sauce over as desired.
