This is a super flavorful and easy meal with chicken feta meatballs, lemon herb yogurt and a fresh tomato and cucumber couscous salad.
Ingredients
Meatballs
- 1 pound ground chicken
- 4 ounces feta, crumbled
- 1/2 cup panko breadcrumbs
- 1 egg
- 2 teaspoons
Greek Seasoning - 1/2 teaspoon pepper
- 2 tablespoons
Roasted Garlic Infused Extra Virgin Olive Oil
Lemon Herb Yogurt
- 1 cup Greek yogurt
- 1 lemon, juiced
- 1/4 cup chopped parsley
- 1/4 cup chopped mint
Couscous Salad
- 1 English cucumber, chopped
- 1 pint grape tomatoes, chopped
- 1 cup Israeli couscous, cooked
- 2 tablespoons
Koroneiki Greek Extra Virgin Olive Oil - 1 tablespoons
Italian Red Wine Vinegar - 1 teaspoon salt
Instructions
- In a large bowl mix the ground chicken, feta, panko breadcrumbs, egg, Greek Seasoning and pepper together.
- Heat the garlic olive oil in a large skillet over medium heat. Form the meat mixture into balls that are about 2 inches wide and add to the skillet. Cook for 3 minutes per side, then turn the heat to low and cover.
- In a small bowl mix the yogurt, lemon juice, and herbs together.
- In a large bowl mix the couscous, cucumbers, tomatoes, olive oil, red wine vinegar, and salt together.
- Assemble the bowl by starting with a layer of yogurt sauce, then the couscous salad, then the meatballs.
