This is a tasty bowl of grilled chicken, orzo, tomatoes, avocado and herbs. Bonus - the leftovers make a great lunch.
Ingredients
- 1 pound chicken breast
- 1 avocado, diced
- 1 pint grape tomatoes, sliced in half
- 1 pound orzo
- 1 lemon, juiced
- 1/2 cup Traditional Aged Dark Balsamic Vinegar
- 2 tablespoons honey
- 1/4 cup parsley, chopped
- 2 tablespoons Meyer Lemon Fused Extra Virgin Olive Oil
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Bring a pot of salted water to a boil and add the orzo to cook to al dente.
- Heat the grill to high heat. Season the chicken with lemon olive oil, salt and pepper. Once the grill is hot grill the chicken for 7 minutes per side until cooked through. Remove from the grill and set aside.
- Heat the balsamic and honey over medium heat until slightly reduced. Brush the chicken with the balsamic glaze.
- In a large bowl mix the cooked orzo, avocado, tomatoes, parsley and lemon juice. Top with the balsamic glazed chicken. Drizzle with a bit of lemon olive oil.
