This is a tasty bowl of grilled chicken, orzo, tomatoes, avocado and herbs. Bonus - the leftovers make a great lunch.
Ingredients

1 pound chicken breast

1 avocado, diced

1 pint grape tomatoes, sliced in half

1 pound orzo

1 lemon, juiced

2 tablespoons honey

1/4 cup parsley, chopped

2 tablespoons Meyer Lemon Olive Oil

1 teaspoon salt

1 teaspoon pepper
Instructions

Bring a pot of salted water to a boil and add the orzo to cook to al dente.

Heat the grill to high heat. Season the chicken with oil, salt and pepper. Once the grill is hot grill the chicken for 7 minutes per side until cooked through. Remove from the grill and set aside.

Heat the balsamic and honey over medium heat until slightly reduced. Brush the chicken with the balsamic glaze.

In a large bowl mix the cooked orzo, avocado, tomatoes, parsley and lemon juice. Top with the balsamic glazed chicken. Drizzle with a bit of lemon olive oil.
