This brings the flavors of a grinder salad to a super flavorful bean salad.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 can cannellini beans, drained and rinsed
- 1 cup chopped salami
- 1 cup chopped provolone
- 1/2 cup pepperoncini, sliced
- 1/2 cup parsley, chopped
- 1 bell pepper, chopped
- 1/2 cup Italian Herb Infused Extra Virgin Olive Oil
- 1/4 cup Italian Red Wine Vinegar
- 2 teaspoons Pizza Seasoning
- 1/4 teaspoon salt
- 1 teaspoon Dijon mustard
Instructions
- In a large bowl, whisk the olive oil, vinegar, pizza seasoning, salt and dijon mustard to make the dressing. Add the beans, salami, cheese, peppers and parsley and toss to coat.
