This is such a simple and delicious dinner with a perfectly cooked steak and an herby vinaigrette. So good!
Ingredients
- 2 strip steaks
- 4 cups mixed greens
- 1 avocado, chopped
- 1 cup grape tomatoes, sliced
- 2 teaspoons Garlic Herb
- 1 lemon, juiced
- 1/2 cup + 1 tablespoon Mediterranean Medley Fused Extra Virgin Olive Oil
- 2 tablespoons Lemon Aged White Balsamic Vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon dijon mustard
- 1 tablespoon parsley, finely chopped
- 1 tablespoon dill, finely chopped
- 1 tablespoon basil, finely chopped
- 1 teaspoon chives, finely chopped

Heat grill to high

Drizzle the steaks with 1 tablespoon of olive oil and rub with Garlic Herb seasoning. Cook the steak for 6 minutes per side then rest for 5 minutes.

While the steak cooks assemble the salad. In a small jar or bowl add the herbs, lemon juice, 1/2 cup olive oil, balsamic vinegar, dijon mustard and a pinch of salt and pepper. Mix together until combined.

In a large bowl add the lettuce, avocado and tomatoes and toss with just enough dressing to coat. Thinly slice the steak and add to the salad. Drizzle with a bit more dressing.
