This is such a simple and delicious dinner with a perfectly cooked steak and an herby vinaigrette. So good!
Ingredients

2 strip steaks

4 cups spring greens

1 avocado, chopped

1 cup grape tomatoes, sliced

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon salt

1 teaspoon pepper

1 lemon, juiced

1/2 cup + 1 tablespoon Mediterranean Medley Olive Oil

1 teaspoon dijon mustard

1 tablespoon parsley, finely chopped

1 tablespoon dill, finely chopped

1 tablespoon basil, finely chopped

1 teaspoon chives, finely chopped
Instructions

Heat grill to high

Mix the cumin, coriander, salt and pepper together in a small bowl. Drizzle the steaks with 1 tablespoon of olive oil and rub with the spice mixture. Cook the steak for 6 minutes per side then rest for 5 minutes.

While the steak cooks assemble the salad. In a small jar or bowl add the herbs, lemon juice, 1/2 cup olive oil, dijon mustard and a pinch of salt and pepper. Mix together well (I like to use a small jar and shake to combine).

In a large bowl add the lettuce, avocado and tomatoes and toss with some of the dressing (based on how much you want). Thinly slice the steak and add to the salad. Drizzle with a bit more dressing.
