This one pan dinner comes together quickly and is packed with flavor thanks to the honey, garlic and balsamic vinegar.
Ingredients
- 1 pound boneless, skinless chicken thighs
- 6 small potatoes
- 2 cloves garlic, grated
- 1/4 cup Traditional Aged Dark Balsamic Vinegar
- 2 tablespoons honey
- 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
- 2 teaspoon salt
- 1/2 teaspoon pepper

Preheat oven to 400 degrees

Mix honey, vinegar, garlic, salt and pepper together and toss with chicken to coat.

Heat olive oil in a large ovenproof skillet and sear chicken on both sides.

Slice potatoes in half and add to the skillet flesh side down.

Bake chicken and potatoes in the oven for 20 minutes until the chicken is cooked through and the potatoes are tender.
