This salad is full of ingredients you might find in a great Italian ginder and is my absolute favorite.
Ingredients
- 1 head of iceberg lettuce, chopped
- 1 head of radicchio, chopped
- 1 can chickpeas, drained and rinsed
- 1/2 cup of salami, chopped
- 1/2 cup of provolone cheese, chopped
- 1/2 cup pepperoncini peppers, chopped
- 1 cup cherry tomatoes, sliced
- 2 tablespoons Italian Seasoning
- 1/2 cup Mediterranean Medley Olive Oil
- 1/4 cup red wine vinegar
- 1 teaspoon honey
- 1 tablespoon mayo
Instructions
- In a small bowl mix the Italian seasoning, olive oil, red wine vinegar, honey and mayo together to make the dressing.
- In a large bowl add the lettuce, radicchio, chickpeas, salami, provolone cheese, pepperoncini and tomatoes. Drizzle the dressing over the top and toss to coat.
