This is an easy and satisfying one pot meal with tender spicy shrimp and creamy rice.
Ingredients
- 1 pound shrimp, peeled, deveined and tails removed
- 1 1/2 cups rice
- 2 cups chicken stock (or water)
- 2 red bell peppers, diced
- 1 jalapeno, diced
- 1 onion, diced
- 1 clove garlic, minced
- 2 teaspoons ancho chile powder
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/4 cup cilantro, chopped
- 2 tablespoons Jalapeno Olive Oil
- 4 tablespoons butter
- 1 lime, cut into wedges
Instructions
- Add the shrimp to a bowl and mix with jalapeno olive oil, ancho chile powder, cilantro and 1 teaspoon salt. Set aside.
- Heat 2 tablespoons butter in a large skillet over medium heat. Add the onion, red bell pepper, garlic, jalapeno, 1 teaspoon salt and pepper and saute for 5 minutes until tender. Add the rice and stir to coat. Cover with chicken stock. Reduce the heat to low and simmer for about 15 minutes until the rice is just tender.
- Cut the remaining 2 tablespoons butter into cubes. Add the shrimp the rice and top with the cubed butter. Cover and cook for about 5 minutes until the shrimp is just cooked through.
- Serve with limes and enjoy.
