Kale Caesar Salad

Kale is tossed with a simple homemade caesar dressing and the most delicious homemade croutons.


  • 1 bunch of kale, chopped

  • 1 egg yolk

  • 1 cup olive oil

  • 4 tablespoons lemon juice

  • 5 cloves garlic

  • 1 teaspoon Worcestershire sauce

  • 1 cup grated parmesan cheese

  • 3 cups torn sourdough bread

  • 1 teaspoon red pepper flakes

  • 2 teaspoons salt

  • 1 teaspoon pepper


  1. To make the croutons, heat 1/4 cup olive oil in a large skillet and add 4 cloves smashed garlic, red pepper flakes, and a pinch of salt. Cook for about 3 minutes until the garlic starts to brown, then remove the garlic.

  2. Add the bread into the garlic oil and toss to coat. Cook for 10 minutes until crisp and golden brown. Set aside.

  3. To make the dressing, blend together the egg yolk, 3/4 cup olive oil, lemon juice, 1 clove of garlic, Worcestershire sauce, parmesan cheese, a pinch of salt and pepper.

  4. Add the kale to a bowl and toss with the dressing to lightly coat. Top with the croutons and enjoy.
