Kale Caesar Salad - Olive Branch Oil & Spice

Kale Caesar Salad

Kale is tossed with a simple homemade caesar dressing and the most delicious homemade croutons.

Ingredients

  • 1 bunch of kale, chopped

  • 1 egg yolk

  • 1 cup  Garlic Olive Oil 

  • 4 tablespoons lemon juice (about 1 lemon)

  • 1 teaspoon Worcestershire sauce

  • 1 cup grated parmesan cheese

  • 3 cups torn sourdough bread

  • 1 teaspoon red pepper flakes

  • 2 teaspoons salt

  • 1 teaspoon pepper

Instructions

  1. Heat the oven to 375 degrees. 
  2. Add the bread to a sheet pan and toss with 1/4 cup olive oil, red pepper flakes, salt and pepper. Roast in the oven for 10 minutes until just crisp. Take out and set aside.

  3. To make the dressing, blend together the egg yolk, 3/4 cup olive oil, lemon juice, Worcestershire sauce, parmesan cheese, a pinch of salt and pepper.

  4. Add the kale to a bowl and toss with the dressing to lightly coat. Top with the croutons and enjoy.

Takes 15 minutes
