This spaghetti tossed with lemony, garlicky shrimp with super delicious and easy.
Ingredients
- 1 pound spaghetti
- 1 pound shrimp, peeled & deveined
- 3 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/2 cup white wined
- 1/2 cup parmesan, grated
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup parsley, chopped
- 2 tablespoons Koroneiki Greek Extra Virgin Olive Oil
- 2 tablespoons butter
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti to al dente. Reserve 1/2 cup pasta water.
- While the pasta cooks, prepare the shrimp. Pat the shrimp dry with a paper towel. Toss with the salt, pepper, lemon zest, and garlic.
- Heat the olive oil in a large skillet over medium heat. Add the shrimp and cook for 2 minutes per side until almost cooked through. Remove the shrimp and set aside.
- Add the lemon juice, wine, pasta water and butter to the skillet. Simmer for a few minutes until slightly reduced. Add the cooked pasta and shrimp to the skillet. Toss with the parmesan and parsley.
