This is a fast and delicious salmon dish with perfectly cooked salmon in a luscious lemon butter sauce. I love to serve this over mashed potatoes or pasta.
Ingredients
- 4 6 ounce salmon fillets
- 2 teaspoons Lakeshore Seasoning
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 lemon, juiced
- 2 garlic cloves, minced
- 3 tablespoons butter
- 1 tablespoon Meyer Lemon Olive Oil
- 2 tablespoons capers
- 1/4 cup chopped parsley
Instructions
- Season the salmon with the lakeshore seasoning and 1 teaspoon salt.
- Heat 1 tablespoon of butter and the olive oil in a skillet over medium heat. Add the salmon skin-side up and sear for 3 minutes, until golden brown. Flip and sear the other side for 3 minutes. Remove and set aside.
- Add the garlic to the pan and saute for 1 minute. Add the wine and lemon juice, scraping the brown bits from the bottom of the pan. Simmer for 2 minutes until slightly reduced.
- Add the remaining 2 tablespoons of butter, capers, parsley, 1 teaspoon of salt and pepper. Return the salmon to the pan and simmer for about 2 minutes until the salmon is just cooked through.
