Simple and super delicious loaf cake with meyer lemon olive oil and poppy seeds.
Ingredients
Cake
- 2/3 cup Meyer Lemon Fused Extra Virgin Olive Oil
- 1 cup sugar
- 1 lemon, zested and juiced
- 3 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla bean paste
- 1 3/3 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon Poppy Seed
Glaze
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Heat oven to 350 degrees
- In a large bowl whisk the sugar, lemon zest, lemon juice, and olive oil until smooth. Whisk in the eggs, buttermilk and vanilla bean. Next whisk in the flour, baking powder, baking soda, salt and poppy seeds.
- Line a loaf pan with parchment and pour in the batter. Bake at 350 degrees for 1 hour. Remove from the pan and cool.
- Make the glaze by mixing the powdered sugar and lemon juice together until smooth. Drizzle over the cooled cake.
