This is a simple pork tenderloin crusted with dijon mustard, herbs, and bread crumbs.
Ingredients

1 pork tenderloin

1/4 cup dijon mustard

1 cup panko bread crumbs

1/4 cup parsley, minced

1 teaspoon salt

1/2 teaspoon pepper

1 lemon, cut into wedges

1/4 cup Sonoran Olive Oil
Instructions

Heat oven to 400 degrees.

Mix the dijon mustard, salt and pepper together in a small bowl. Brush all over the pork tenderloin. Mix the bread crumbs and herbs together then roll the pork tenderloin in the bread crumb mixture to coat.

Heat the oil in an oven proof skillet. Add the pork tenderloin and sear for a couple minutes on each side. Transfer to the oven and cook for about 10 minutes until the internal temp reaches 140 degrees.

Let rest for 10 minutes before slicing and serve with lemon.
