This is a simple pork tenderloin crusted with dijon mustard, herbs, and bread crumbs.
Ingredients
- 1 pork tenderloin
- 1/4 cup dijon mustard
- 1 cup panko bread crumbs
- 1/4 cup parsley, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 lemon, cut into wedges
- 1/4 cup Sonoran Arizona Olive Oil
Instructions
- Heat oven to 400 degrees.
- Mix the dijon mustard, salt and pepper together in a small bowl. Brush all over the pork tenderloin. Mix the bread crumbs and herbs together then roll the pork tenderloin in the bread crumb mixture to coat.
- Heat the oil in an oven proof skillet. Add the pork tenderloin and sear for a couple minutes on each side. Transfer to the oven and cook for about 10 minutes until the internal temp reaches 140 degrees.
- Let rest for 10 minutes before slicing and serve with lemon.
