Peach Cobbler - Olive Branch Oil & Spice

This is an easy and super delicious peach cobbler with caramelized peaches and a thin crisp layer of vanilla bean cake.

Ingredients

  • 6 peaches, pitted and sliced
  • 1 stick butter
  • 1/4 cup brown sugar
  • 2 tablespoons Lemon White Balsamic Vinegar
  • 1 cup flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 1 tablespoon Vanilla Bean Paste

Instructions

  1. Heat oven to 375 degrees.
  2. Melt the butter in a large ovenproof skillet over medium heat. Add the peaches, brown sugar, and balsamic vinegar. Saute for 5 minutes until caramelized.
  3. While the peaches saute, mix the flour, granulated sugar, baking powder, salt, egg, milk and vanilla bean paste until smooth. 
  4. Pour the cake batter over the peaches and transfer to the oven. Bake for 30 minutes.
  5. Serve warm with ice cream.
