This pork gets a ton of flavor by being marinated in pineapple puree and topped with more pineapple.
Ingredients
- 1 pork tenderloin
- 1 pineapple, diced
- 1/4 cup red onion, diced (about 1/2 onion)
- 1/2 cup cilantro, chopped
- 1 teaspoon salt
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 2 tablespoons Jalapeno Olive Oil
- 1 cup rice, cooked

Cut the pork tenderloin into bit sized pieces

In a large bowl mix the pineapple, red onion, cilantro, salt, soy sauce, rice vinegar, and sugar together. Transfer half of the pineapple mixture to a food processor or blender and blend until smooth.

Pour the blended pineapple mixture over the pork and marinate for 10 minutes.

Heat the olive oil in a skillet on medium high heat. Sauté the pork for 2 minutes then toss in the pineapple mixture and cook for another 2 minutes until the pork is just cooked through and the pineapple is slightly caramelized.

Serve over rice and enjoy.
