This is a flavorful grilled pork chop with a bright salsa of olives, capers, parsley, and lemon.
Ingredients

2 thick cut pork chops

1 tablespoon dijon mustard

2 teaspoons rosemary

1 teaspoon thyme

1 teaspoon salt

1 teaspoon pepper

1 cup green olives, chopped

1/4 cup capers

1 cup parsley, chopped

1 lemon, zested and juiced

1/4 cup Garlic Olive Oil

1/2 teaspoon red pepper flakes
Instructions

In a small bowl mix the mustard, 2 tablespoons olive oil, rosemary, thyme, salt and pepper. Rub all over the pork chops.

Heat the grill to high. Grill the pork chop for about 7 minutes per side until cooked to an internal temp of 145 degrees. Rest the pork for 5 minutes before serving.

While the pork cooks, combine the olives, capers, parsley, lemon juice and zest, 2 tablespoons olive oil and red pepper flakes.

Top the pork with the olive mixture and enjoy!
