This is such a delicious, easy one pan meal with flavorful balsamic glazed pork chops topped with roasted tomatoes, olives, and capers.
Ingredients
- 2 thick cut pork chops
- 2 tablespoons Koroneiki Olive Oil
- 2 tablespoons Traditional Dark Balsamic Vinegar
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon ground coriander
- 1 cup olives (mix of Kalamata and Castelvetrano), chopped
- 1 pint grape tomatoes, sliced in half
- 2 tablespoons capers
- 1/2 cup parsley, chopped
- 1 lemon, sliced
Instructions
- Heat oven to 450 degrees. Place pork chops on sheet pan or oven proof skillet and season with 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon ground coriander, 1 tablespoon olive oil and 2 tablespoons balsamic vinegar. Marinade for 15 minutes.
- Place the pork chops in the oven and cook for 15 minutes, flipping mid way.
- While the pork cooks mix the olives, tomatoes, capers and parsley with a teaspoon of salt and a tablespoon of olive oil. With 5 minutes remaining for the pork, add the olive mixture to the pan with the pork.
- When the pork is cooked through (145 degree internal temp) remove from the oven and let rest 5 minutes before serving.
- Serve with sliced lemon.
