This is such a delicious, easy one pan meal with flavorful balsamic glazed pork chops topped with roasted tomatoes, olives, and capers.



  1. Heat oven to 450 degrees. Place pork chops on sheet pan or oven proof skillet and season with 1 teaspoon salt, 1 teaspoon pepper, 1 teaspoon ground coriander, 1 tablespoon olive oil and 2 tablespoons balsamic vinegar.  Marinade for 15 minutes.  
  2. Place the pork chops in the oven and cook for 15 minutes, flipping mid way.
  3. While the pork cooks mix the olives, tomatoes, capers and parsley with a teaspoon of salt and a tablespoon of olive oil.  With 5 minutes remaining for the pork, add the olive mixture to the pan with the pork.
  4. When the pork is cooked through (145 degree internal temp) remove from the oven and let rest 5 minutes before serving.
  5. Serve with sliced lemon.
