These quesadillas are so delicious. They are full of spicy potatoes, black beans and ooey gooey cheese.
Ingredients

2 russet potatoes, diced

1/2 onion, chopped

2 garlic cloves, minced

2 jalapenos, chopped

1 can black beans, drained and rinsed
- 2 tablespoons Chili con Carne
- 4 tablespoons butter

2 cups monterey jack cheese

4 large flour tortillas

1 lime, wedges
Instructions

Add the potatoes to a large pot of salted water and bring to a boil. Cook the potatoes until just tender, about 10 minutes, and drain.

In a large skillet melt the butter over medium heat. Add the onion, garlic, jalapenos and chili con carne. Cook for 5 minutes.

Add the potatoes and black beans. Toss well to coat and cook for 5 minutes.

Heat another skillet over medium heat. Add a tortilla and fill with the potato filling and top with 1/2 cup of cheese. Fold and cook on both sides until crisp on the outside and melty on the inside. Repeat for the remaining quesadillas.

Serve with lime.
