Potato Quesadilla - Olive Branch Oil & Spice

Potato Quesadillas

These quesadillas are so delicious. They are full of spicy potatoes, black beans and ooey gooey cheese.


  • 2 russet potatoes, diced

  • 1/2 onion, chopped

  • 2 garlic cloves, minced

  • 2 jalapenos, chopped

  • 1 can black beans, drained and rinsed

  • 2 tablespoons Chili con Carne
  • 4 tablespoons butter
  • 2 cups monterey jack cheese

  • 4 large flour tortillas

  • 1 lime, wedges


  1. Add the potatoes to a large pot of salted water and bring to a boil. Cook the potatoes until just tender, about 10 minutes, and drain.

  2. In a large skillet melt the butter over medium heat. Add the onion, garlic, jalapenos and chili con carne. Cook for 5 minutes.

  3. Add the potatoes and black beans. Toss well to coat and cook for 5 minutes.

  4. Heat another skillet over medium heat. Add a tortilla and fill with the potato filling and top with 1/2 cup of cheese. Fold and cook on both sides until crisp on the outside and melty on the inside. Repeat for the remaining quesadillas.

  5. Serve with lime.

Takes 25 minutes
