Pasta tossed with a green goddess dressing, kale, bacon and tomatoes. Perfect for a picnic!

Ingredients

  • 1 pound short pasta
  • 1 pint tomatoes, sliced in half
  • 4 slices bacon, chopped
  • 2 cups kale, chopped
  • 1/2 cup Greek yogurt
  • 1/2 cup mayo
  • 1/2 lemon, juiced
  • 2 tablespoons White Balsamic Vinegar
  • 1 cup herbs - dill, parsley, basil, mint
  • 1 clove garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Bring a large salted pot of water to a boil and cook pasta to al dente.
  2. Add the bacon to a skillet and cook until just crisp. Remove and set aside.
  3. Add the yogurt, mayo, lemon juice, balsamic vinegar, herbs, garlic, salt and pepper to a food processor or blender and blend until smooth.
  4. Toss the hot pasta with the green goddess dressing and toss with the bacon, tomatoes and kale.

Serves 4
