Pasta tossed with a green goddess dressing, kale, bacon and tomatoes. Perfect for a picnic!
Ingredients
- 1 pound short pasta
- 1 pint tomatoes, sliced in half
- 4 slices bacon, chopped
- 2 cups kale, chopped
- 1/2 cup Greek yogurt
- 1/2 cup mayo
- 1/2 lemon, juiced
- 2 tablespoons White Balsamic Vinegar
- 1 cup herbs - dill, parsley, basil, mint
- 1 clove garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Bring a large salted pot of water to a boil and cook pasta to al dente.
- Add the bacon to a skillet and cook until just crisp. Remove and set aside.
- Add the yogurt, mayo, lemon juice, balsamic vinegar, herbs, garlic, salt and pepper to a food processor or blender and blend until smooth.
- Toss the hot pasta with the green goddess dressing and toss with the bacon, tomatoes and kale.
