This is an absolute favorite for special occasions because it is super delicious and really simple to make.
Ingredients
- 4-5 pound boneless prime rib roast
- 2 tablespoons Prime Rib Rub
- 1 cup sour cream
- 2 tablespoons prepared horseradish
- 1 tablespoon chives, minced
- 1/2 teaspoon ground white pepper
Instructions
- Season the rib roast with prime rib rub on all sides and leave out at room temperature for an hour.
- Heat the oven to 500 degrees. Place the roast in a roasting pan fat side up and cook in the oven for 15 minutes. Lower the temperature to 325 degrees and cook for another hour until the internal temperature reaches 130 degrees for medium rare. Remove from the oven and tent with foil for 30 minutes before slicing.
- While the roast cooks make the horseradish cream by mixing the sour cream, horseradish, chives and white pepper.
- Slice the roast against the grain in 1/2" slices and serve with horseradish cream.
