Super simple and ridiculously delicious - crispy bacon, fresh corn and cheesy tortellini!
Ingredients

2 ears of corn, kernels removed

4 slices bacon, chopped

2 packages fresh cheese tortellini
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1/4 cup parmesan, grated
- 2 tablespoons parsley, chopped
- 1 clove garlic, grated
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
Instructions

Bring a large salted pot of water to a boil

Add bacon to a large skillet and heat to medium. Cook until crisp and remove from the pan. Add the corn, garlic, salt, pepper and red pepper flakes to the skillet. Saute for 5 minutes. Add the chicken stock to the pan. Mix well and cook for 2 minutes. Mix in the cream and parmesan cheese. Reduce the heat to low.

Add the tortellini to the boiling water. Once cooked, remove from the water and add toss with the sauce. Top with bacon and parsley.
