Pumpkin Tiramisu - Olive Branch Oil & Spice

Pumpkin Tiramisu

This twist on a classic tiramisu makes for a creamy, pumpkiny dessert that is perfect for Thanksgiving.

Ingredients

  • 1 can pumpkin puree
  • 1 tablespoon Pumpkin Spice, plus more for dusting
  • 1 teaspoon salt
  • 1/2 cup brown sugar
  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1 cup strong coffee or espresso
  • 2 tablespoons sugar
  • 30 ladyfingers

Instructions

  1. Add the pumpkin, brown sugar, Pumpkin Spice and salt to a bowl and mix with a hand mixer. Add the mascarpone cheese and mix until well combined.  Add the cream and whip until light a fluffy. Set aside.
  2. Mix the sugar into the coffee until dissolved. Dunk half the ladyfingers one at a time into the coffee and arrange in an even layer in the bottom of a baking pan.  Add half of the pumpkin cream on top and spread into an even layer. Repeat another layer of dunked ladyfingers and pumpkin cream. 
  3. Cover and refrigerate for 8 hours or overnight. 
  4. When ready to serve dust the top with pumpkin spice. Slice and enjoy!

Takes 20 minutes (plus chilling time)
