This twist on a classic tiramisu makes for a creamy, pumpkiny dessert that is perfect for Thanksgiving.
Ingredients
- 1 can pumpkin puree
- 1 tablespoon Pumpkin Spice, plus more for dusting
- 1 teaspoon salt
- 1/2 cup brown sugar
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1 cup strong coffee or espresso
- 2 tablespoons sugar
- 30 ladyfingers
Instructions
- Add the pumpkin, brown sugar, Pumpkin Spice and salt to a bowl and mix with a hand mixer. Add the mascarpone cheese and mix until well combined. Add the cream and whip until light a fluffy. Set aside.
- Mix the sugar into the coffee until dissolved. Dunk half the ladyfingers one at a time into the coffee and arrange in an even layer in the bottom of a baking pan. Add half of the pumpkin cream on top and spread into an even layer. Repeat another layer of dunked ladyfingers and pumpkin cream.
- Cover and refrigerate for 8 hours or overnight.
- When ready to serve dust the top with pumpkin spice. Slice and enjoy!
