I love these quick and delicious black beans that are simmered with onion, garlic, cumin and bay. They’re my go for Chicken Enchiladas or with Steak Fajita Bowls - and the only time I don’t rinse canned beans.
Ingredients

1 tablespoon Mission Trail Olive Oil

1 onion, diced

2 cloves garlic, grated

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon cayenne pepper

1 bay leaf

2 cans black beans (with juices)
Instructions

Heat oil in a pot over medium heat. Add the onion and saute for about 5 minutes. Add the garlic, cumin, cayenne, and salt and cook for about 1 minute.

Add the black beans and bay leaf and simmer for about 15 minutes
Takes 20 minutes
