I love to make these simple pickled red onions. They so easy and add a punch to just about anything.



  1. Thinly slice the red onion with a mandoline and add to a jar.

  2. Mix water, vinegar, sugar, salt and coriander in a small pot and heat to medium heat until everything is dissolved. Cool to room temperature and poor over the onions. Top with a lid and refrigerate for at least an hour. Keep in the fridge for up to 10 days.

Takes 1 hour

Serves 6-8
