This salmon is super delicious and easy to make. It has a flavorful blood orange and chile rub and is topped with a tropical mango salad that gets a kick with lemon white balsamic vinegar.
Ingredients
- 1 pound salmon filet
- 2 tablespoons
Blood Orange Olive Oil - 1 tablespoon
Chile Lime Rub - 1 mango, peeled, pitted and chopped
- 1 red bell pepper, chopped
- 1 jalapeno, thinly sliced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 tablespoons
Lemon Drop White Balsamic Vinegar
Instructions
- Heat the oven to 450 degrees.
- Mix the blood orange olive oil and chile lime rub together in a small bowl. Add the salmon, skin side down, to a sheet pan and brush the rub over the top and sides. Roast for 20 minutes until just cooked through.
- While the salmon cooks make the salsa. Add the mango, bell pepper, jalapeno pepper, cilantro, lime juice and vinegar to a bowl and mix well.
- Once the salmon is cooked, top with the salsa and enjoy!
