Salmon with Mango Salsa

This salmon is super delicious and easy to make. It has a flavorful blood orange and chile rub and is topped with a tropical mango salad that gets a kick with lemon white balsamic vinegar.

  1. Heat the oven to 450 degrees.
  2. Mix the blood orange olive oil and chile lime rub together in a small bowl. Add the salmon, skin side down, to a sheet pan and brush the rub over the top and sides.  Roast for 20 minutes until just cooked through.
  3. While the salmon cooks make the salsa. Add the mango, bell pepper, jalapeno pepper, cilantro, lime juice and vinegar to a bowl and mix well.
  4. Once the salmon is cooked, top with the salsa and enjoy!
