Walleye is a Minnesota staple! This delicious freshwater fish is breaded, sauteed and topped with a lemon butter sauce.
Ingredients

4 fillets of walleye

1 cup flour

2 eggs

2 cups panko

3 lemons, juiced

4 tablespoons butter

1/4 cup white wine
- 2 tablespoons parsley, chopped

1 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Place the flour, eggs and bread crumbs in 3 plates. Season the flour with salt and pepper.

Heat 2 tablespoons of butter in a skillet to medium heat. Heat the oven to 300 degrees.

Dredge the walleye in flour, egg, and panko. Saute in the walleye in the melted butter for 5 minutes on each side. Place on a sheet pan and repeat for all the walleye. Place the walleye in the oven while you make the sauce.

Clean the skillet then melt the remaining butter. Add the lemon juice and wine and reduce by a third.

Serve the walleye with the sauce, top with parsley and enjoy.
