This is a quick and delicious pasta dish with cheese tortellini, sun dried tomato, sausage, and spinach. It is also makes great leftovers!
Ingredients
- 1 pound cheese tortellini
- 1 pound Italian sausage
- 1/4 cup sun dried tomatoes, chopped
- 3 cups spinach
- 1 cup chicken stock
- 1/4 cup parmesan cheese
- 2 cloves garlic chopped
- 1 tablespoon Koroneiki Greek Extra Virgin Olive Oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Bring a large pot of salted water to a boil and cook the tortellini
- While the pasta cooks heat olive oil in a large skillet over medium heat. Brown the sausage then add the garlic and sundried tomato. Cook for 2 minutes then add the chicken stock, salt and pepper. Cook for about 5 minutes until slightly reduced.
- Toss in the tortellini and spinach until the spinach is just wilted. Top with parmesan.
