Sausage and Spinach Tortellini

This is a quick and delicious pasta dish with cheese tortellini, sun dried tomato, sausage, and spinach. It is also makes great leftovers!


  • 1 pound cheese tortellini

  • 1 pound italian sausage

  • 1/4 cup sundried tomatoes, chopped

  • 3 cups spinach

  • 1 cup chicken stock

  • 1/4 cup parmesan cheese

  • 2 cloves garlic chopped

  • 1 tablespoon Koroneiki olive oil (or any varietal)

  • 1 teaspoon salt

  • 1/2 teaspoon pepper


  1. Bring a large pot of salted water to a boil and cook the tortellini

  2. While the pasta cooks heat olive oil in a large skillet over medium heat. Brown the sausage then add the garlic and sundried tomato. Cook for 2 minutes then add the chicken stock, salt and pepper. Cook for about 5 minutes until slightly reduced.

  3. Toss in the tortellini and spinach until the spinach is just wilted. Top with parmesan.

Takes 20 minutes
