This is a quick and delicious pasta dish with cheese tortellini, sun dried tomato, sausage, and spinach. It is also makes great leftovers!
Ingredients

1 pound cheese tortellini

1 pound italian sausage

1/4 cup sundried tomatoes, chopped

3 cups spinach

1 cup chicken stock

1/4 cup parmesan cheese

2 cloves garlic chopped

1 tablespoon Koroneiki Olive Oil

1 teaspoon salt
- 1/2 teaspoon pepper
Instructions

Bring a large pot of salted water to a boil and cook the tortellini

While the pasta cooks heat olive oil in a large skillet over medium heat. Brown the sausage then add the garlic and sundried tomato. Cook for 2 minutes then add the chicken stock, salt and pepper. Cook for about 5 minutes until slightly reduced.

Toss in the tortellini and spinach until the spinach is just wilted. Top with parmesan.
Takes 20 minutes
