Sesame Chicken Salad - Olive Branch Oil & Spice

Super flavorful grilled sesame chicken over a crunchy bed of cabbage and a creamy carrot ginger dressing.

Ingredients

Sesame Chicken

Salad

  • 1 head Napa cabbage, sliced
  • 1 red bell pepper, sliced
  • 2 carrots, peeled and sliced
  • 2 scallions, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup sliced almonds

Dressing

  • 2 large carrots, peeled and chopped
  • 1/3 cup rice vinegar
  • 1/4 cup Jalapeno Olive Oil
  • 2 tablespoons ginger, grated
  • 1 teaspoon salt

Instructions

  1. Heat the grill to high. Mix the soy sauce, honey, sesame oil, balsamic vinegar, sesame seeds, red pepper flakes and lime juice in a large bowl. Add the chicken and toss to coat. Marinate the chicken for 15 minutes. 
  2. Remove the chicken from the marinade and grill for about 5 minutes per side until just cooked through. Remove from the grill and rest for 5 minutes before slicing.
  3. To make the dressing, add the carrots, ginger, rice vinegar, olive oil and salt to a blender and blend until smooth. 
  4. Add the cabbage, red bell pepper, scallions, cilantro, and carrots to a large bowl. Toss wit the dressing and massage into the cabbage. 
  5. Top the cabbage with the sliced chicken and almonds. 

Takes 30 minutes
