Super flavorful grilled sesame chicken over a crunchy bed of cabbage and a creamy carrot ginger dressing.
Ingredients
Sesame Chicken
- 1 pound boneless chicken thighs
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon Toasted Sesame Oil
- 1 tablespoon Sesame Ginger White Balsamic Vinegar
- 1 tablespoons White Sesame Seeds
- 1 teaspoon Korean Chile Flakes
- 1 lime, juiced
Salad
- 1 head Napa cabbage, sliced
- 1 red bell pepper, sliced
- 2 carrots, peeled and sliced
- 2 scallions, sliced
- 1/2 cup cilantro, chopped
- 1/2 cup sliced almonds
Dressing
- 2 large carrots, peeled and chopped
- 1/3 cup rice vinegar
- 1/4 cup Jalapeno Olive Oil
- 2 tablespoons ginger, grated
- 1 teaspoon salt
Instructions
- Heat the grill to high. Mix the soy sauce, honey, sesame oil, balsamic vinegar, sesame seeds, red pepper flakes and lime juice in a large bowl. Add the chicken and toss to coat. Marinate the chicken for 15 minutes.
- Remove the chicken from the marinade and grill for about 5 minutes per side until just cooked through. Remove from the grill and rest for 5 minutes before slicing.
- To make the dressing, add the carrots, ginger, rice vinegar, olive oil and salt to a blender and blend until smooth.
- Add the cabbage, red bell pepper, scallions, cilantro, and carrots to a large bowl. Toss wit the dressing and massage into the cabbage.
- Top the cabbage with the sliced chicken and almonds.
