This is a delicious pasta with fresh tomatoes and lots of herbs, cheese and cream.
Ingredients
- 1.5 pounds roma tomatoes, quartered
- 1 onion, quartered
- 4 cloves garlic, smashed
- 1 tablespoon fresh thyme
- 1 cup fresh basil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 1/4 cup Nocellara del Belice Olive Oil
- 1 cup cream
- 1/2 cup parmesan cheese, grated
Instructions
- Bring a large salt pot of water to a boil and cook the pasta to al dente.
- While the pasta cooks, make the sauce. Heat the olive oil in a sauce pot. Add the tomatoes, onions, garlic, thyme, basil, salt, pepper and red pepper flakes. Cover and simmer for 10 minutes until the tomatoes and onions are tender. Add the cream and parmesan cheese and simmer another 5 minutes. Use an immersion blender to blend the sauce until smooth.
- Once the pasta is cooked, drain and toss with the sauce.
- Top with more parmesan cheese
