1 garlic clove, grated

2 avocados

3 limes

1/2 cup cilantro, chopped
-
1/2 cup sour cream
-
2 chipotle peppers, chopped
-
3 cups shredded cheese
-
1 tomato, chopped
-
1 jalapeno, sliced
-
1 tablespoon Jalapeno Olive Oil
-
1 bag of tortilla chips
Instructions
-
Preheat oven to 400 degrees

Heat olive oil in a skillet over medium heat. Add garlic and cook for about a minute before adding the ground beef. Cook until browned. Add the taco seasoning and 1/4 cup water to the ground beef. Mix together and simmer.
-
To assemble the nachos place a layer of chips on a sheet pan and top with cheese. Add another layer of chips and top with the ground beef and more cheese. Bake in the oven for 6 minutes until the cheese is ooey gooey.
-
While the cheese melts make the guac and sour cream. For the guacamole, mash together 2 avocados, 1/4 cup cilantro, juice of 2 limes and a pinch of salt in a bowl. For the sour cream, mix together the sour cream, chipotle, and juice of half a lime in a bowl.
-
Once the cheese is melted, top with guac, sour cream, tomatoes, jalapenos, and remaining cilantro.
