This is such a quick and delicious pickled red onion recipe. I love to use Smoked Balsamic Vinegar for a nice smokiness, but any balsamic will do!
Ingredients
- 1 red onion, sliced thin
- 1/2 cup Smoked Balsamic Vinegar
- 1/2 cup water
- 1 teaspoon coriander seed
- 1 teaspoon black peppercorn
- 1 bay leaf
Instructions
- In a small pot add the vinegar, water, coriander, peppercorn, and bay leaf and heat over medium. Simmer for 5 minutes.
- Add the onions to a glass jar and pour the vinegar mixture over the onions. Cover and refrigerate for an hour. Keep in the fridge for up to 10 days.
Takes 1 hour, 10 minutes
