Smoked Brisket

Our foolproof brisket is rubbed with our Brisket Rub and smoked low and slow until perfectly tender and smoky.

Ingredients

  • 1 whole beef brisket (~12 pounds), fat cap trimmed to 1/4 inch
  • 1/4 cup yellow mustard
  • 1/2 cup Brisket Rub

Instructions

  1. Place the brisket on a sheet pan. Slather the mustard all over the brisket then season with the brisket rub.  Marinade overnight.
  2. Heat smoker to 225 degrees. Place the brisket directly on the grates fat side down and cook for 3-4 hours until the internal temperature reaches 160 degrees.
  3. Remove the brisket and wrap with two layers of heavy duty foil. Increase the temperature on to 275 degrees. Place the brisket back in the smoker and cook for until 2-3 hours until the internal temperature reaches 200 degrees.
  4. Remove from the grill and rest for 1 hour. Remove from the foil and slice against the grain. 

Takes 8 hours (plus overnight marinade)
