Our foolproof brisket is rubbed with our Brisket Rub and smoked low and slow until perfectly tender and smoky.
Ingredients
- 1 whole beef brisket (~12 pounds), fat cap trimmed to 1/4 inch
- 1/4 cup yellow mustard
- 1/2 cup Brisket Rub
Instructions
- Place the brisket on a sheet pan. Slather the mustard all over the brisket then season with the brisket rub. Marinade overnight.
- Heat smoker to 225 degrees. Place the brisket directly on the grates fat side down and cook for 3-4 hours until the internal temperature reaches 160 degrees.
- Remove the brisket and wrap with two layers of heavy duty foil. Increase the temperature on to 275 degrees. Place the brisket back in the smoker and cook for until 2-3 hours until the internal temperature reaches 200 degrees.
- Remove from the grill and rest for 1 hour. Remove from the foil and slice against the grain.
Takes 8 hours (plus overnight marinade)
