This is a really filling, easy and delicious blend of rice, black beans, habanero peppers, and kale.
Ingredients

1 small onion, diced

2 cloves garlic, minced

2 habanero peppers, minced

2 cans black beans, drained and rinsed

1/2 cup chicken or vegetable stock

1 bunch kale, chopped

1 cup white rice
-
1 1/2 cup water
-
1/4 cup cilantro, chopped

2 tablespoons Mission Trail Olive Oil

1 teaspoon salt
Instructions

Bring 1 1/2 cup water and 1 teaspoon salt to a boil add the rice, cover and reduce to simmer for 15 minutes.

While the rice cooks, heat oil in a skillet over medium heat. Add the onion and cook for 5 minutes, then add the garlic and habanero and cook for 2 minutes.

Add black beans, kale and stock and cook for 5 minutes

Fold in the rice and cilantro.
Takes 20 minutes
