This pork shoulder is marinated in a blend of orange, lime, chipotle, garlic and cilantro and cooked all day. The leftovers are great for tacos.
Ingredients

1 6-7 pound pork shoulder

1 can chipotle peppers in adobo

2 oranges, juiced

2 limes, juiced

4 garlic cloves, crushed

1/4 cup cilantro

2 tablespoons salt

1 tablespoon pepper

1 cup Jalapeno Olive Oil
Instructions

In a blender or food processor blend the chipotle peppers, orange juice, lime juice, garlic, cilantro, salt, pepper and olive oil together.

Place the pork fat side up in a baking dish and score the skin and fat in a cross-hatch pattern. Poor the marinade all over the pork and marinate covered for at least 2 hours or overnight.

When ready to cook, preheat the oven to 250 degrees. Cook the pork for 4 hours until the internal temperature reaches 160 degrees, then increase the oven to 275 degrees and cook for another 2-3 hours until the internal temperature reaches 200 degrees.

Rest for 30 minutes then pull the pork and enjoy
