This delicious bowl is filled with spicy, crispy salmon, cucumber and edamame salad, rice and avocado.
Ingredients
- 1 pound salmon filet, cut into bite sized pieces
- 2 tablespoons
Everything Bagel seasoning - 1 tablespoon
Korean Chile Flakes - 2 tablespoons
Toasted Sesame Oil - 2 tablespoons
Honey Ginger Balsamic Vinegar - 2 tablespoons soy sauce
- 2 tablespoons mayo
- 1 tablespoon Sriracha
- 1 english cucumber, sliced
- 1 cup edamame
- 1 avocado, sliced
- 1 cup rice, cooked
- 1 green onion, minced
Instructions
- Heat oven to 425 degrees.
- Add the salmon pieces to a large bowl and mix with 1 tablespoon toasted sesame oil, everything bagel seasoning and korean chile flakes. Place on a sheet pan and cook for 10 minutes.
- While the salmon cooks, assemble the salad. Mix 1 tablespoon toasted sesame oil, honey ginger balsamic vinegar, soy sauce, mayo and sriracha. Toss with the cucumbers and edamame.
- Place the rice, cucumber salad and avocado in a bowl. Top with the salmon and green onion.
