Tuscan Chickpeas - Olive Branch Oil & Spice

Tuscan Chickpeas

I love these creamy chickpeas that come together in 15 minutes!

Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 2 cups vegetable (or chicken) broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sundried tomatoes, chopped
  • 2 tablespoons Tuscan Seasoning
  • 1 tablespoon butter
  • 1 tablespoon Nocellara del Belice Olive Oil 
  • 1/2 cup parmesan cheese, grated
  • 1/4 cup basil, chopped

Directions

  1. Heat butter and olive oil in a pot over medium heat. Add the onion and saute for a few minutes. Add the garlic and tuscan seasoning and saute for about 5 minutes until the onion is tender.
  2. Add the tomatoes, chickpeas, and broth and simmer for 5 minutes.  Finish by stirring in the cream, parmesan and basil. Serve with crusty bread.
