I love these creamy chickpeas that come together in 15 minutes!
Ingredients
- 2 cans of chickpeas, drained and rinsed
- 2 cups vegetable (or chicken) broth
- 1 cup heavy cream
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup sundried tomatoes, chopped
- 2 tablespoons Tuscan Seasoning
- 1 tablespoon butter
- 1 tablespoon Nocellara del Belice Olive Oil
- 1/2 cup parmesan cheese, grated
- 1/4 cup basil, chopped
Directions
- Heat butter and olive oil in a pot over medium heat. Add the onion and saute for a few minutes. Add the garlic and tuscan seasoning and saute for about 5 minutes until the onion is tender.
- Add the tomatoes, chickpeas, and broth and simmer for 5 minutes. Finish by stirring in the cream, parmesan and basil. Serve with crusty bread.
