These carrots are an easy and delicious side that get a kick from vinegar and sweetness from honey.
Ingredients

3-4 large carrots, peeled and sliced

1 teaspoon thyme, chopped

1 teaspoon salt

1/4 cup apple cider vinegar

1/4 cup honey

2 tablespoons butter
Instructions

Heat oven to 375 degrees

Melt butter in an ovenproof skillet. Saute the carrots, salt and thyme until the carrots are browned on both sides. Add the vinegar and honey and roast in the oven for 10 minutes until tender.
