Vodka Pasta

You can't go wrong with a classic vodka sauce! 

Ingredients

  • 1 pound pasta, I like rigatoni

  • 1 stick of butter

  • 1 teaspoon red pepper flakes

  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 shallot, minced

  • 2/3 cup vodka

  • 1 14 ounce can crushed tomatoes

  • 1 cup heavy cream

  • 1 cup grated parmesan

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta until al dente.

  2. Meanwhile, heat the butter in a large pan. Add the shallots and red pepper flakes and cook for 5 minutes. Add the vodka and bring to a boil, then reduce the heat and simmer for 5 minutes.

  3. Add the tomatoes, cream, salt and pepper and simmer for another 5 minutes.

  4. When the pasta is cooked drain and then fold in the pasta with the sauce and add the cheese.

Takes 25 minutes

Serves 4-6
