BBQ Chicken - Olive Branch Oil & Spice

 

This chicken is covered in a tasty rub then slathered in BBQ sauce while it grills. Such a delicious summer meal. I cook this in a smoker, but you can easily do this on the grill or in the oven.

  1. Rub the barbecue rub all over the chicken and under the skin. Marinade in the rub for at least 2 hours or overnight.
  2. Heat the smoker to 180 degrees. Place the chicken on the smoker breast side up and cook for 1 hour. (If you’re not using a smoker you can skip this step)
  3. Increase the grill or smoker heat to 350 degrees. Baste the chicken in BBQ sauce and cook until it reaches an internal temp of 165 degrees, about another hour.
  4. Rest for 10 minutes before serving. Serve with extra BBQ sauce.

Takes 2 hours (plus marinating time)
