This chicken is covered in a tasty rub then slathered in BBQ sauce while it grills. Such a delicious summer meal. I cook this in a smoker, but you can easily do this on the grill or in the oven.
Ingredients
-
1 whole chicken, cut into 2 pieces
- 3 tablespoons Kansas City BBQ Rub (or BBQ rub of choice)
- 1 bottle BBQ sauce
Instructions
-
Rub the barbecue dust all over the chicken and under the skin. Marinade in the rub for at least 2 hours or overnight.
-
Heat the smoker to 180 degrees. (If you’re not using a smoker you can skip this step). Cook the chicken for 1 hour.
-
Increase the heat to 350 degrees. Baste the chicken in BBQ sauce and cook until it reaches an internal temp of 165 degrees, about another hour.
-
Rest for 10 minutes before serving. Serve with extra BBQ sauce.
Takes 2 hours (plush marinating time)
