These are super delicious and easy take on enchiladas that are great for weeknights - and leftovers.
Ingredients
- 1 pound ground beef
- 1 onion, grated
- 1 clove garlic, grated
- 2 tablespoons Avocado Oil
- 1/4 cup Taco Seasoning
- 1 jar enchilada sauce
- 2 cups monterey jack cheese, shredded
- 1/4 cup beef stock
- 8 small flour tortilla shells
- tomatoes, jalapenos, and cilantro for garnish
Instructions
- Heat oven to 400 degrees
- Heat avocado oil in a skillet and add the onion and garlic. Saute for 3 minutes then add the ground beef. Cook until browned. Add the taco seasoning and beef stock. Mix well and simmer for 5 minutes.
- Add a couple tablespoons of enchilada sauce to the bottom of a baking dish. Assemble the enchiladas by adding about 2 tablespoons of ground beef filling and 2 tablespoons cheese to a tortilla shell. Roll and place seam side down in the baking dish. Repeat for all the filling and half the cheese.
- Pour the enchilada sauce over the top and top with the remaining cheese.
- Cover with foil and bake for 15 minutes. Remove the foil and bake for another 5 minutes until the cheese is golden and bubbly.
- Top with tomatoes, jalapenos, and cilantro and dig in!
