These are super delicious and easy take on enchiladas that are great for weeknights - and leftovers.

Ingredients

  • 1 pound ground beef
  • 1 onion, grated
  • 1 clove garlic, grated
  • 2 tablespoons Avocado Oil
  • 1/4 cup Taco Seasoning
  • 1 jar enchilada sauce
  • 2 cups monterey jack cheese, shredded
  • 1/4 cup beef stock
  • 8 small flour tortilla shells
  • tomatoes, jalapenos, and cilantro for garnish

Instructions

  1. Heat oven to 400 degrees
  2. Heat avocado oil in a skillet and add the onion and garlic. Saute for 3 minutes then add the ground beef. Cook until browned.  Add the taco seasoning and beef stock. Mix well and simmer for 5 minutes.
  3. Add a couple tablespoons of enchilada sauce to the bottom of a baking dish.  Assemble the enchiladas by adding about 2 tablespoons of ground beef filling and 2 tablespoons cheese to a tortilla shell. Roll and place seam side down in the baking dish. Repeat for all the filling and half the cheese.
  4. Pour the enchilada sauce over the top and top with the remaining cheese.
  5. Cover with foil and bake for 15 minutes. Remove the foil and bake for another 5 minutes until the cheese is golden and bubbly.
  6. Top with tomatoes, jalapenos, and cilantro and dig in!
